Sweet Potatoes

We have always been fond of sweet potatoes our usual preferred method being peeled and chopped into cubes and then roasted with fresh Rosemary until the sweet potato goes all nice and caramelised on the outside.  Yummy and delish.  This is just something I tend to do on a regular basis usually to accompany our Sunday roast as another side dish and to pad the meal out that little bit more. Adding fresh rosemary from my herb bed makes all the difference as well.  Rosemary is a herb that I like and I use it fairly frequently.

However I had not until recently tried sweet potatoes baked.  I am in love.  One of these makes quite a substantive meal in itself and they are easily prepared.  I tend to cook my sweet potato in the microwave for 12 minutes and then finish it off in the oven. (I tend to have the small oven cooking meat like chicken or sausages and then just bung the sweet potato in with whatever is cooking) I do the same with baked potatoes and then just add butter.  With ordinary potatoes you can add as much butter as you want but with sweet potatoes as they have a buttery flavour err on the side of caution just a little bit as you do not want to overpower and spoil your meal.  Root vegetables of any kind are good for you and they appear on a regular basis in my kitchen as they are not only good for you they help balance out your energy levels on a gradual release basis rather than in one fair swoop.  If you have not tried them they are well worth the effort.  Once I have the garden sorted I would not mind having a go at growing these as well as pumpkins.

  1. I had a baked sweet potato last night for dinner, no butter just a sprinkle of grated cheese with garlic and herbs and a pile of salad.

    Truth be told I was not at all keen on the idea but was very pleasantly surprised when I tried them. I love them cut into chunks and roasted like roast potatoes and tossed in some dripping or just a little oil until they are caramelised but I must say cooking them in the microwave until they were soft for 12 minutes and then finishing them of in the oven until they were crisp I found them very satisfying and enjoyable on their own just with a dribbling of butter. I was a bit the same with pumpkin to start with but that is now a very firm fixture on the the menu I roast it like roast potatoes the same and always make sure that there is some in the freezer for Christmas dinner. I also buy the different varieties fresh. sometimes we don't like things because of the way they are cooked and often its just about finding the right recipe. Hope you are keeping well.
