Ingredients: Monthly Shopping List for Beginning of August Revision 1


For Pork Pies

5lb Pork Shoulder  - should make 5 x 1lb Pork Pies
Black Pepper
White Pepper
Bread Flour

Sausage Casings

For Pork and Herb Sausages - makes 1kg (16 large, 24 small)

1 1/2lb Pork Shoulder meat
9oz belly Pork
Black pepper
freeze dried mixed herbs
3oz brown breadcrumbs
Sausage casings of choice

Merguez Sausages - makes 1lb sausage (about 6 to 8)

1lb fatty lamb (skinned boned breast is ideal)
Hot Paprika
Sweet Paprika
Garlic Salt
Ground Cumin
Ground Coriander
Freshly Ground Black Pepper
Sausage Cases of choice

For Pork Rillettes

1.5kg boned and skinned pork belly
4 rashers of streaky bacon
6 juniper berries
6 black peppercorns
1 blade of mace
5 fat cloves of garlic
Fresh thyme - sprigs x 2
1 bay leaf
Sea salt and black pepper
300ml dry white wine
2-4 tablespoons goose fat

Sweet Italian Sausage

About 20 feet of natural hog casings
3pounds/ 1.4 kg lean pork shoulder
1 pound/454g pork fatback or fat trimmed from shoulder
1/2 cup/57g whole fennel seeds
2 teaspoons of fennel pollen
2 tablespoons ground black pepper
1 tablespoon of salt
1 cup/237g of apple juice
