If you have a large family to feed when it comes to baking you do not necessarily want to be making mix after mix, and for speed need a bulk recipe. This one like the Sandwich cake mix - here http://tarragonnthyme.blogspot.co.uk/2012/10/batch-baking-sandwich-cake-mix.html
However some of the flavourings may be more to adults taste than children but there are variations.
Makes three different cakes from the same mix. But first of all we have to start with The Cake Mix
8oz/225g self raising flour sifted
2 teaspoons/2 x 5ml of baking powder
8oz/225g caster sugar
8oz /225g soft (tub margarine like Stork)
This makes a 2 lb/1kg cake mix
Preparation time: 30 minutes
To prepare the basic cake mix place all the ingredients into a mixer bowl or a large mixing bowl and using the mixer beat the ingredients together for approximately 1 minute or so until the mixture goes nice and creamy and light. Use the mixture to make the following cakes:

Measure out approximately 1lb/450g of the prepared basic cake mix
20z/50g chopped mixed peel
Blender Lemon Frosting as per link above for the sandwich cake mix
crystallised orange or lemon slices to decorate.
Weigh the specified amount of the prepared basic cake mix and fold in the mixed peel. Spoon the mixture into about 22 paper cases placed in tartlet or bun pans. Alternatively divide between 16 deep bun tins. Bake in a preheated oven Gas Mark 5/190 degrees C/375 degrees F, for about 20 minutes. Spoon the lemon frosting on each cake and then decorate with the orange or lemon segments and use to decorate the tops.
Makes approximately 22
If you do not like mixed peel add chocolate chips to the basic mix and then add orange flavoured frosting or coffee frosting.
Ginger Raisin Loaf
1lb/450g prepared basic cake mix
20z/50g S R Flour sifted
1/2 teaspoon/1 x 2.5ml spoon of ground ginger
2 pieces stem ginger chopped
1 tablespoon/15m spoon of granulated sugar
Weigh the specified amunt of the prepared basic cake mix and fold in the remaining ingredients except the sugar. Turn into a greased 450g/1lb loaf tin and spread evenly and sprinkle with the sugar. Bake in a preheated oven Gas mark 4/180 degrees C/350 degrees F for 50 to 60 minutes or until the cake begins to pull away from the sides of the tin. Turn out onto a wire tray and leave to cool.
Omit the ground ginger and stem ginger and flavour with ground cinnamon or mixed spice and add 1oz of chopped walnuts.
Use mixed dried fruit or stoned chopped dates instead of raisins
