Onions, Pickled Onions, Souper Mix and Spiced Orange Slices

I still have not managed to get the pickled onions done so this weekend I have a hot date with 2 stone of pickling onions.  I have all the vinegar in stock.  I buy most of my vinegar from the Cash & Carry as it works out cheaper that way.  I just buy malted vinegar or white vinegar and spice it myself.  I also use cider vinegar and white wine vinegar.  So that should keep me out of mischief for a little while.  Probably a Saturday night job with the radio on, sat on my Nan's little stool.

I also have some spiced orange slices to make.  I am going to be using large oranges and smaller Clementines or Tangerines cut into slices and then cooked in a spiced vinegar.  I use them to cover a ham  and to give it more flavour - it also keeps the meat nice and moist and adds a bit more flavour.

So two more useful recipes for the pantry shelf. By the way once the orange slices are used up use the vinegar in salad dressings etc.  It really adds a little bit more flavour!

I also need to get some Souper Mix(from the River Cottage Preserves Recipe Book by Pam Corbin  sorted and some burnt onions for gravy mix.  I had thought about preparing the onions and then instead of bottling them drying them in the dehydrator.  Will have to have a think about that.


I tend to buy nets of onions and sometimes I use more than others so if there are any onions that are getting past their best I usually turn them into an onion and garlic marmalade which is lovely with cheese sarnies.  Yum.  It is also making the most of what you actually have to hand and not wasting anything.  Although there are not many things to make, I should get a good few jars of pickled onions, orange slices, Souper Mix and burnt onions, so only a few selected ingredients but quite a few jars produced for the minimum of cost as well.
