Hello in Cornwall. (Would love to visit there one day). I live on Tamborine Mountain, just south of Brisbane, Qld and I love to preserve. I currently do jams, jellies and chutneys for sale at a local market. I like your idea of Geranium Jelly. If you have access to lots of roses, try making rose petal jam...All you do is wash and pat dry fresh rose petals (about 250 grams or three big fistfuls), add 500 g of white sugar a bit at a time in a mortar. Do it in small lots, occasionally squeezing in a few drops of lemon juice, until you have done the whole lot. I then bottle it, and process for at least half an hour in a pot of boiling water. Scented roses are obviously best, and I used mixed colours. It comes out a pale to mid pink.
