Making Mustard Reprise

 


After my recent post on Instagram about making mustard, several of you have asked for the recipe to have a go at your own.

Before you have a go at this you will need the following ingredients

7oz Yellow Mustard Seeds

7 oz Black Mustard Seeds

Your Chosen Beer - I have used a bottle of Spitfire (500ml) this time round but in the past have used a Beer called "Butty Bach". In reality the choice of beer is down to personal choice.

1 Tablespoon of Sea Salt

1 Tablespoon of Freshly grated nutmeg

6 Tablespoons of Runny honey

6 fl oz of Cider Vinegar.

I used Brown seeds as could not locate black.  I tend to source my seeds from Asian grocery stores.  They use mustard seeds a lot in cooking.


I also used yellow mustard seeds which we are more familiar in this country with.




After adding the beer it all went frothy in the pot.






After the frothiness had settled down.




The recipe is not mine, but is from Rosie Makes Jam (Love Jars) recipe website, which I must say is very good.  I believe that there are other websites with their own take on things on the Internet.

Making Mustard

It is terribly simple to make basically you soak the mustard seeds overnight and once soaked then the following day add the rest of the ingredients and then pop into a food processor in small individual batches.  I prepare mine to be a mixture of smooth and whole, but you can grind completely smooth if you want to.  It keeps for ages in a cool place.  Like all preserves the stars need to be sterilised before adding in the processed mustard. However, like most things once the jar is opened, store in the fridge.  It will need a couple of weeks to mature, so now would be about the right time to make it in time for Christmas either to use or to give away as a small present.  This produces a lot of little pots of mustard.  If it is just for yourself it may be worth halving the recipe, unless of course you have people to present too.

Hope this helps.  there are other recipes out there on the Internet and not just for a wholegrain mustard, but mustards flavoured with herbs and spices.
