A Lazy Day for a change

Today has been a lazy day where we overslept, but it has been that kind of day where it just did not matter.  Everything has been relaxed and for a change I have been in the moment.  Something I must do more of.

We had a very last minute put together "brunch" consisting of toasted crumpets (the really large ones) slathered in butter and also "Seriously Strong" cheese spread, followed by some of the Scones from yesterday and plenty of hot sweet tea.

OH walked her Ladyship, he came back saying it was bitter out.  It was thick fog first thing when he took her with a heavy hoar frost.  We have not had snow.  It has to be pretty bad in the surrounding villages for Peterborough to end up with snow as it is fairly low-lying.

Then it was a lazy afternoon watching Christmas movies for me. (I took some time for myself). OH was "gaming" on his computer taking part in some competition I think.

Later, I cooked Cottage Pie which we were supposed to have last night, but switched the menu around and cooked today instead.  No photos, but it went down extremely well on this bitterly cold day warming us both up.  We had double helpings today and polished it off but it has gone down very nicely.

Tomorrow we will have roast chicken with all the trimmings, so that we get at least another couple of meals and some stock and soup out of the roast together with what is in the fridge.  We could also be having a stir fry of sorts this week as well.  See how things go.

Back to the Pantry tomorrow.  Its a slow old job but will make a heck of a difference once done.
