Homemade Hot Dogs

Cooking does not have to be complicated, and sometimes at the word Cooking people freeze at the mere thought.  However with most things it is the practice that makes the meal, and the finding your own way around a recipe.  I was taught to cook instinctively by watching what the food does in a pan when cooking. The food will tell you at which stage it is at.

This particular tea comes under the category of  "Scratch meal" in this household.  Something that is quick and simple to prepare like baked beans on toast, Sardines in Tomato sauce on toast, fried egg sandwich something that feeds you quickly and cheaply . Food that is often overlooked, but it can be oh so tasty. Today however we are going to have homemade hot dogs.  Not using hot dog sausages but Chipolatas from our local Butcher. I am afraid I am extremely faddy about sausages or chipolatas.  They have to have some flavour, so go for the best sausages you can. Ideally, would have had the long finger rolls, but there we are round buns it is.  They do just as well.

To start with I cut the buns in half and then toast both cut sides of the bun slightly until golden brown.



Due to the fact that we have round buns, I have therefore decided to coil two chipolatas together and hold them together with a skewer and fry them gently in a pan.  






Once browned I then put them under a low heat to keep warm whilst I finish off with onions fried in a little butter and oil.  Once caramelised to your liking, I then add a little water (not much) which stops the onion frying more but also releases some more of the flavour and forms like a "gravy" for the onions.

Then compile your "hot dogs" by putting some of the onions on the base of the buns, add your sausage spiral, and then add more onions on the top.  You could also add some sliced cheese if you wanted to.  Pop on your lids and then serve nice and warm.  You can add mustard, or ketchup to taste.






As I say makes a lovely quick "Scratch" meal.

Ingredients for two:

4 Buns (we had large Burger Buns)

8 Chipolatas (or 4 chunky sausages) [if using larger buns you might like to add more Chipolatas to fill the bun up a little more.

2 Medium sized onions chopped

A couple of wooden skewers.

I must say it has gone down very nicely, followed by a nice cold glass of Pepsi.
