Apricot Ice cream
I love ice cream and this one can be made without buying in ingredients especially = well in my household that's the case. OH uses Soya Milk, I always keep dried Apricots in for baking, wine making etc. Always have oranges in and really it is making best use of what you have around. I am lucky enough to have a freestanding table top ice cream machine which makes extra fabulous ice cream.
This ice cream can be made with or without an ice-cream maker.
6oz dried un-sulphered if possible apricots
1 pint unsweetened soya milk
1 tablespoon orange juice
1 tsp grated orange rind
Soak Apricots in half the soya milk for three hours
Cook for 10 to 15 minutes until softened. Cool slightly.
Whizz up in a blender with the remaining soya milk adding it a little at a time to give a smooth texture
Stir in 1 tablespoon orange juice and 1 teaspoon grated rind.
Put into an ice cream maker or a plastic tub in the freezer.
Beat it several times as it is freezing (only needed if not using an ice cream machine)
Stand at room temperature to soften slightly before serving. Which also helps release the flavour.
