Easter Sunday
Here in Peterborough, the Sun has been out and there is a breeze which I have found a little chilly still, but still a glorious day.
Have had a relatively lazy day here today although washing has been hung out and dried. We have had a very delicious Easter Dinner, a Leg of Lamb studded with garlic and sprinkled with homemade Rosemary salt. Cooked over a little water to create the gravy for later on with some mixed herbs and white pepper. This does double duty as it helps to keep the Lamb moist, covered in a tent of foil until about 40 minutes from the end of cooking and forms the basis for the gravy.
Served with Roast potatoes, roast parsnip, and onion.
Have also prepared petit-Pois, carrots, Broccoli, cauliflower, mashed potato. Has gone down very nicely and well worth the wait Plenty of meat left for either having a duplicate meal or indeed making a Posh Shepherd's Pie using up any veggie leftovers as well as Lamb. Makes a very delicious and tasty meal. That is plenty of meals over the next few days.
There is still half of the Meat Loaf I made yesterday in the fridge. This will get eaten up during the week either cold or hot; well chuffed with this and a friend who I was at school with (and used to take cookery lessons with us the only lad in the class - happy days) has given me some other ideas to mix it up a bit and maybe try next time.
