OR LEMON OR GRAPEFRUIT BARLEY WATER
Ingredients:
2oz Pearl barley
1 pint of water
Juice of 2 lemons
2oz of sugar
Method:
Put the Barley into a saucepan and just cover with cold water and bring to the boil. Strain off the water and rinse the barley under cold running water. Return it to the saucepan and add 1 pint of water. Bring to the boil again then cover and simmer for 1 hour. Strain the liquid into a bottle,jug or basin add the sugar stirring until dissolved and then cool. When the mixture is cold add the strained lemon juice. I always chill this before serving and serve with ice cubes. Use it as required.
A Grapefruit version can be made of this as well. Make as per the recipe above but substitute the strained juice of 1 large grapefruit for the lemon juice. Sweeten it to taste.
Very refreshing on a hot day. Mum used to make this a lot and keep it in a mixing bowl in the bottom of the fridge.
