When times are sad a little baking is in order

When times are sad, I reach for cake. With all the sad news about the Queen, and the fact that it has for the best part being a colder day here, I succumbed and gave in and did a spot of baking.  I know I should not do it, but for a few moments in the here and now (I am being mindful here), the sweetness of the tarts just lifts the spirits slightly and makes the day not so grey. (I don't do grey - when we first moved into this house the majority of the wallpaper was grey and I had to put up with this for a couple of years before being able to do anything. I definitely do not do grey. Now colour, lots of colour that for me is very uplifting and reflects my energy depending on what colour I choose to wear on a particular day. However, I just love colour. 

Today I have made what our family have known for years as Coconut Cheesecakes. I also understand that they may also be known as Coconut Tarts. They are very yummy and Moorish.  They basically consist of a pastry tart which has jam (usually Raspberry but I have used Plum today), then a Coconut sponge type layer although there is no flour in the mixture.

Coconut Cheesecakes

The recipe is within this post.  They are a good one to make to snack on generally (naughty but nice), but they are also ideal if you have a family tea (or for baking during the week and pack up boxes).

I might even make something else tomorrow.  It is a long time since I have made Rock Cakes, or a Sandwich cake.  I also thought that at some point I would make a couple of fruit loaves for snacking on with some butter and some cheese and maybe an apple.  Good food does not have to be complicated.
